Thai Sweet Potato Pizza

As someone who has maintained a plant-based diet most of her life, I often get asked “What am I suppose to feed you… rabbit food?

To which I often smile at their nativity.

Don’t get me wrong, I’m not making any rash judgments about what they know, just that I think it’s funny as to what people believe about how those who primarily live off of plants eat.

Accordingly, I wanted to share one of my favorite dishes, as no one I’ve ever served it to missed having meat included.

Thai Sweet Potato Pizza

  • 2 Pre-made Pizza crusts (may be substituted with Trader Joe’s Pizza dough or homemade – I just never seem to have the time to start from scratch)
  • 1 Large Sweet Potato (Pre-baked & Sliced)
  • 1 Medium Red Onion (Sliced Thin)
  • 1 Bunch of Cilantro (Diced)
  • 6 Large Mushrooms (Sliced)
  • 1 Jar of Satay Sauce (I recommend a thicker one like Thai Kitchen’s)
  • 3 Cups of Cheese or Cheez (About 1.5 Cups per each pizza)

Directions ::

  • Marinate the sweet potatoes in about 1/4 of the jar of Satay sauce
  • Spread the remaining sauce over the crust (If not starting out with pre-made crust, follow the baking directions on the package)
  • Layer the pizza with the ingredients, as desired
  • Bake for 8 to 10 minutes at 400 degrees
